Easy Taco Soup

Knock weeknight dinners out of the park with this easy and delicious taco soup recipe. Kid-approved and ready in 30 minutes!

Ingredients
  

  • 2 tbsp avocado or olive oil
  • 1 lb ground meat (turkey, beef, or chicken)
  • 15 oz can pinto beans (drained)
  • 15 oz can black beans (drained)
  • 15 oz can corn (drained)
  • 14.5 oz can diced and fire roasted tomatoes (or Rotel)
  • 2 cups broth (bone or chicken)
  • 2 tbsp taco seasoning
  • 1/4 cup cilantro (chopped)

Instructions
 

  • Heat the oil in a cast iron Dutch oven or large soup pot over medium heat.
  • Brown the ground meat and drain if needed. You can choose to throw in some diced onion and garlic as well.
  • Add in the beans, tomatoes, corn, broth, and taco seasoning. Reduce heat to low after soup begins to boil. Simmer for at least 15 minutes.
  • While simmering, chop cilantro and add to the soup.
  • Garnish with cheese or sliced avocado if desired. Serve with some cornbread and enjoy!
