Easy Taco Soup

Knock weeknight dinners out of the park with this easy and delicious taco soup recipe. Kid-approved and ready in 30 minutes!

- 2 tbsp avocado or olive oil
- 1 lb ground meat (turkey, beef, or chicken)
- 15 oz can pinto beans (drained)
- 15 oz can black beans (drained)
- 15 oz can corn (drained)
- 14.5 oz can diced and fire roasted tomatoes (or Rotel)
- 2 cups broth (bone or chicken)
- 2 tbsp taco seasoning
- 1/4 cup cilantro (chopped)
Heat the oil in a cast iron Dutch oven or large soup pot over medium heat.
Brown the ground meat and drain if needed. You can choose to throw in some diced onion and garlic as well.
Add in the beans, tomatoes, corn, broth, and taco seasoning. Reduce heat to low after soup begins to boil. Simmer for at least 15 minutes.
While simmering, chop cilantro and add to the soup.
Garnish with cheese or sliced avocado if desired. Serve with some cornbread and enjoy!
